Feast! St. Kateri Tekawitha

Today is St. Kateri Tekawitha's feast day!

As I'm still getting the hang of incorporating feast days around here, today actually marks the very first feast day that I: 1. remembered on time, even though I missed doing her novena and 2. baked something to celebrate the occasion.

So in honor of St. Kateri, I made a Lily of the Mohawks milk cake from Catholic Cuisine. (Although these St. Kateri's Indian Corn Cookies look freaking awesome!) Anyway, here's my cake!

This one baked up beautifully. Note: the recipe should list 2 TEASPOONS of baking powder, not 2 tablespoons so make sure to use teaspoons.

This is my first official post on this blog so I probably should have typed up an introduction first but I really didn't want to miss posting on this feast day. lol

Coming up I'll post a (probably too long) introduction. :D

God our Father, Whom Kateri Tekakwitha liked to call the Great Spirit,
We thank you for having given us this young woman as a model of Christian life.
Despite her frailness and her community’s resistance, she bore witness to the presence of Christ.
With her companions, she drew close to the elderly and to the sick.
Every day, she saw in nature a reflection of your own glory and beauty.
Grant that by her intercession we may always be close to you, more sensitive to the needs of those around us, and more respectful of creation. With her, we shall strive to discover what pleases you and endeavour to accomplish it until that day you call us back to you. Amen.
